Roast Chicken with Gremolata

A really yummy way to jazz up a roast chicken, the gremolata is so tasty you’ll end up wanting to spoon it on everything. 

✔️handful of flat leaf parsley, chopped
✔️handful of tarragon, chopped
✔️large handful of breadcrumbs 
✔️zest and juice of 1 lemon
✔️2 tbsp capers
✔️2 garlic cloves, peeled & chopped
✔️4 tbsp extra virgin olive oil

Blend everything together with a little salt and pepper and serve with roast chicken. We spatchcocked ours and rubbed with a little olive oil, lemon juice, salt and pepper. Delicious!
