I received a fab box of goodies from Seafood By Sykes, a fish and seafood delivery company, which included 4 x salmon fillets, 4 x tuna steaks, 2 large cod loins and a bag of king prawns. I was brainstorming for what to cook first and after how well the Tuscan salmon went down I thought I would try and create a slightly healthier version (it is January after all).

Garlic & Tomato Tuscan Salmon (serves 4):
✔️4 salmon fillets
✔️2 tbsp olive oil
✔️2 tbsp butter
✔️1/2 tsp red pepper flakes
✔️1 tbsp smoked paprika
✔️1 tbsp Italian seasoning
✔️ 2 banana shallots, peeled & finely chopped
✔️ 5 garlic cloves, peeled & grated
✔️ 4 medium on the vine tomatoes, finely chopped
✔️150g spinach leaves (about half a bag)
✔️1/2 bunch fresh basil leaves, chopped
✔️100ml chicken stock (I used 1/2 a stock cube)
✔️100ml white wine
✔️sea salt and freshly ground black pepper
Add the olive oil to large pan and place on a medium heat. Add the salmon, red pepper flakes, smoked paprika, Italian seasoning, salt and pepper and cook the salmon on both sides until cooked through (circa 5mins). Remove the salmon from the pan and set aside.
In the same pan add the butter and once melted, add the garlic and onion and cook until soft. Then add the tomatoes, basil and white wine and bubble away until the wine has nearly all reduced. Then add the spinach, chicken stock, check the seasoning and cook for 3-4 minutes until the spinach has wilted and the stock has reduced slightly. Place the salmon fillets back on top to heat back through and then serve.
We had ours with roasted new potatoes (45 minutes at 180° fan with olive oil and salt and pepper) and green beans. Pure Bliss!
