Gordy’s Asian Beef Salad

The perfect way to use up leftover roast beef. Nice and healthy, the veg can be mixed up depending on what you have in the fridge and the dressing is unreal.

Dressing (serves 4):
✔️2 tbsp caster sugar 
✔️3 tbsp lime juice 
✔️2 garlic cloves, crushed 
✔️1 red chilli, finely chopped 
✔️2cm piece of fresh ginger, grated 
✔️2 tbsp fish sauce 
✔️1 tbsp soy sauce (more to taste if required)
✔️4 tsp sesame oil 

Then any veg can work but what dad sticks to is:
✔️cabbage, shredded 
✔️sugar snap peas (finely sliced)
✔️small salad leaves 
✔️bean sprouts 
✔️red pepper (finely sliced)
✔️small tomatoes (halved)
✔️spring onions (sliced diagonally)
✔️coriander leaves to taste 
✔️roasted peanuts 

Most importantly, leftover roast beef, finely sliced. 

P.s if you want to prep everything in advance, don’t mix in the dressing until you are ready to serve to stop some of the veg going soggy.
