Chocolate Chip & Pecan Cookies

The cookies you need in your life, golden on the outside and soft and slightly chewy on the inside. After tasting one we quickly wrapped a few to to drop at some friends before we ate them all in one go. 

Makes 12:

✔️125g unsalted butter, softened 
✔️110g brown sugar 
✔️55g white sugar 
✔️1 egg
✔️1 tsp vanilla extract 
✔️150g plain flour 
✔️1/2 tsp sea salt
✔️1/2 baking powder 
✔️100g dark or milk chocolate chips 
✔️70g chopped pecans (or walnuts) 

Pre-heat the oven to 180° and line two baking trays with baking paper.

Cream the butter and sugar until fluffy and smooth. Add the egg and vanilla and beat again until smooth. Sift the flour, salt and baking powder into the bowl and mix lightly. Stir in the chocolate and nuts.

Spoon dessert spoons of dough onto the baking trays, leaving space for spreading. Bake for 10–12 minutes until pale golden. Cool on the trays for 2–3 minutes before moving to a wire rack to cool completely.
