When I come home late from work I normally want to eat as quickly as possible, without reaching for a ready meal. This is perfect for that; fridge to table in under 15 minutes.
For one:
✔️ 1 salmon fillet
✔️100g tenderstem broccoli
✔️Handful of cherry tomatoes
✔️1 tsp dried thyme
✔️1 garlic clove, crushed
Start off with putting two frying pans on a medium heat with a tablespoon of olive oil, and a get a third pan with water boiling for the broccoli.
In one pan, once hot, season the salmon and fry on both sides until cooked through (this should take 4-5 minutes on each side). While that is cooking, chop the cherry tomatoes in half and add to the second pan with the crushed garlic. After 2 minutes, add the thyme, followed by 100ml of water. Cook the tomatoes until they break down, adding more water if necessary (this should take around 5 minutes).
Then once the water is boiled in the remaining pan, add the tender stem broccoli for 2-3 minutes until al dente.
