This is a potato salad recipe you need in your repertoire. Super easy, nice and tangy and a great addition to a summer spread.
✔️ 1kg new potatoes
✔️ 8 spring onions, finely sliced
✔️ sea salt and black pepper
✔️ 4 tbsp Dijon mustard
✔️ 100ml olive oil
✔️ juice and zest of 1 orange
✔️ 2tbsp cider or white wine vinegar
✔️ generous handful of fresh chopped herbs
Firstly, boil the potatoes until tender. Then add the spring onions and herbs to a serving bowl. Meanwhile, add all the remaining ingredients to a screw top jar and shake well until completely mixed and you have your tangy dressing.
Once the potatoes are cool, add them and the dressing to the serving bowl and chill until ready to eat. 🍴
