I made this twice in one week, think that says it all. A perfect quick, easy and healthy midweek dinner recipe.
Serves 2 (pictured is half the recipe):
✔️ 2 cod loins
✔️ 2 handfuls of spinach
✔️ 4 tbsp mango chutney
✔️ 1 red onion, finely sliced
✔️ 8 cherry tomatoes, diced
✔️ 2 tbsp chopped fresh coriander
✔️ juice of 1 lime
Heat the oven to 200C/fan 180C/gas 6. Take 2 sheets of baking paper or foil and divide the spinach between them. Sit the cod on top then spoon over the mango chutney. Fold up the paper or foil to make a parcel then put on a baking tray and cook for 15 minutes.
Meanwhile, mix the red onion, tomato and coriander with the lime juice and season. Once the fish is ready, serve with cauliflower rice and tender stem broccoli.
