Asian Chicken Traybake

Since I started following @simplyfoodbymandy I have saved nearly all her recipes, but this one has been at the top of my ‘to try’ list and it definitely didn’t disappoint. Super tasty but even better it is so easy to make. ⁣

Asian chicken traybake (serves 4):⁣
✔️ 8-10 chicken thighs ⁣
✔️ coriander to serve ⁣

Marinade:⁣
✔️ 2 garlic cloves, crushed ⁣
✔️ 3 spring onions, finely chopped ⁣
✔️ 1 tbsp grated ginger ⁣
✔️ 2 tbsp fish sauce ⁣
✔️ 2 tbsp soy sauce ⁣
✔️ 2 tbsp maple syrup ⁣
✔️ 1 tbsp sesame oil ⁣
✔️ 1 red chilli, finely chopped ⁣
✔️ 1 lemongrass (outer stalks removed and finely chopped)⁣
✔️ 3 kaffir lime leaves, finely chopped ⁣

Mix the marinade ingredients together and marinade the chicken thighs for atleast 30 minutes. ⁣

When ready to cook, add the chicken to an oven tray, skin side up, and cook in a preheated oven at 200c for 30-45 minutes. ⁣

I served mine with some extra chopped chilli, coriander leaves, basmati rice and tenderstem broccoli and it was bloody great.
