My absolute favourite pork recipe (I think all my family / friends will vouch for this as no doubt I have cooked it for them at some point too).
Serves 3:
✔️ large tenderloin fillet
✔️ 3 tbsp dark soy sauce
✔️ 3 tbsp honey
✔️ 2 tbsp sesame oil
✔️ 1 tbsp garlic granules
✔️ 1 tbsp ground ginger
Mix all the ingredients together and marinade for atleast 6 hours but preferably overnight.
When ready to cook, bring the meat to room temperature and preheat the oven to 200c / 180c fan. Heat a large frying pan on a medium-high heat, and once hot sear the pork on all sides for 6 minutes (over 1 minute on each side).
Remove from the pan and in to a baking tray, then place in the oven for 10-12 minutes until cooked through. While the meat is resting for 5-10 minutes, pour the leftover marinade in to a pan and bring to a rapid boil for 5 minutes. Carve the meat, pour over the sauce and serve.
Pictured, most recently I served the meat with my favourite butternut squash (recipe here) and Pak Choi which was stir fried in vegetable oil, garlic, ginger and red chilli for a couple of minutes.👩🏻🍳
