This is another fave from Sabrina Ghayour’s book; Persiana. The marinade totally transforms the asparagus and is such an easy one to have in the back pocket.
✔️ 2 tbsp olive oil
✔️ 2 tbsp honey
✔️ 2 tsp harissa
✔️ The grated rind and juice of 1 lemon
✔️ A generous pinch of salt
✔️ 200g aspragus tips
Mix the ingredients together and marinade the asparagus for between 30-60 minutes, but no more.
Once ready, over a medium heat, cook the asparagus on a griddle pan for 4-5 minutes on each side then serve immediately.
