Currently obsessed with this salad, so much so that I have had it twice this week which is unheard of at the moment.
A perfect accompaniment to a summer spread ☀️
✔️ 1kg beans (we used a mixture of flageolet and cannellini canned beans, drained)
✔️ 100g feta cheese crumbled
✔️ 1 tsp dried marjoram or 2-3 tsp fresh which we used, ground in a pestle and mortar
✔️ big pinch of salt and freshly ground pepper
✔️ 75ml extra virgin olive oil
✔️ zest and juice of 1 large lemon
Mix the ingredients together and served chilled 🍴
