When you can’t get to Nandos, bring Nandos to you!
Ingredients to serve 4:
Peri Peri Chicken
✔️ Roast in a bag peri peri whole chicken. (Absolute steal at £3.85 and cooks in an hour and a half)
Sweet Potato Wedges:
✔️One large sweet potato
✔️ 1 tsp garlic granules
✔️ 1 tsp ground ginger
✔️ 1 tsp dried oregano
✔️1 tbsp olive oil
Chop the sweet potato in to similar sized wedges, coat in the spices and olive oil and roast in the oven for 40 minutes.
Spicy Rice:
✔️ one white onion, finely chopped
✔️ one red pepper, finely chopped
✔️ 100g frozen peas (only 61p for a 900g bag)
✔️ 2 x pouches of long grain rice (circa 70p a pouch!)
✔️ 1 tbsp paprika
✔️ 1 tbsp turmeric
✔️ 1/2 tsp crushed chillies
✔️ 2 tbsp olive oil
Heat the olive oil in a frying pan over a medium heat and fry the onion and pepper until soft. Then add the spices for one minute, add the rice and peas, stir and cook until hot through.
Perinaise:
✔️200g mayonnaise
✔️ 1 tbsp chilli powder
✔️ juice of 1/2 lime
Mix ingredients together and set aside until ready
Corn on the cob:
✔️ 2 x packs of fresh sweetcorn
✔️2 tbsp butter
Boil the corn as per the pack instructions and serve hot with the butter
Halloumi:
✔️1 pack of halloumi
✔️1 tbsp olive oil
Heat the oil in a frying pan on a medium to high heat. Evenly slice the halloumi in to 8 pieces and once the oil is hot, fry until brown on both sides. Serve piping hot!
Serve with salad leaves and chopped limes.
This will definitely be one I will be cooking again at home, it went down a treat!
