Pear, Blue Cheese and Parma Ham Salad

We have been eating this salad a lot recently, the flavours just really work together so well and is perfect as the weather is warming up. The below serves 4.

✔️ 4 firm, ripe pears, sliced lengthways in to 1cm slices⁣
✔️ 2 tbsp olive oil⁣
✔️ 1 tbsp white wine vinegar⁣
✔️ 1 tbsp honey⁣
✔️ 250g bag mixed leaf salad⁣
✔️ 150g blue cheese, crumbled⁣
✔️ handful of walnuts, roughly chopped⁣
✔️ 4 slices of thin Parma ham

  1. Put the pears in a bowl and drizzle with 1 tsp of the oil. Heat a pan, then cook the pears, in batches, for 1 min on each side. Set aside to cool.
  2. Using the same pan, fry the parma ham until crispy then break up in to rough pieces.
  3. Mix the remaining oil, vinegar and honey. Toss the pears, leaves and cheese, walnuts and Parma ham, divide between 4 plates and drizzle with the dressing.
