Anyone who regularly brunches with me knows this is my absolute fave. Served with with warm sourdough what more could a girl need in the morning?!
Ingredients for 4:
✔️ 2 tins of chopped tomatoes
✔️ 1 pepper, thinly sliced
✔️ 1 red onion, chopped
✔️ chopped chorizo (as much as you want)
✔️ 6 eggs (we used 5 because mum only wanted 1)
✔️ 100g feta
✔️ 1 tsp dried oregano
✔️ 1 tsp ground coriander
✔️ 1 tbsp sweet smoked paprika
✔️ 4 garlic cloves, finely chopped
✔️ large handful of chopped parsley to serve
Soften the onions and pepper in olive oil in an oven proof pan on medium heat, then add the chorizo, spices and garlic for 1-2 minutes.
Then add the chopped tomatoes, salt and pepper and let bubble away for 10 minutes.
Make a little space to crack the eggs then sprinkle over the feta and put in the oven at 180c for 5-10 minutes depending on how runny you like them.
Serve with chopped parsley and some fresh crusty bread 🥖
