Chorizo and Feta Shakshuka

Anyone who regularly brunches with me knows this is my absolute fave. Served with with warm sourdough what more could a girl need in the morning?! ⁣

Ingredients for 4:⁣
✔️ 2 tins of chopped tomatoes⁣
✔️ 1 pepper, thinly sliced⁣
✔️ 1 red onion, chopped ⁣
✔️ chopped chorizo (as much as you want) ⁣
✔️ 6 eggs (we used 5 because mum only wanted 1)⁣
✔️ 100g feta ⁣
✔️ 1 tsp dried oregano⁣
✔️ 1 tsp ground coriander⁣
✔️ 1 tbsp sweet smoked paprika⁣
✔️ 4 garlic cloves, finely chopped ⁣
✔️ large handful of chopped parsley to serve ⁣

Soften the onions and pepper in olive oil in an oven proof pan on medium heat, then add the chorizo, spices and garlic for 1-2 minutes. ⁣

Then add the chopped tomatoes, salt and pepper and let bubble away for 10 minutes. ⁣

Make a little space to crack the eggs then sprinkle over the feta and put in the oven at 180c for 5-10 minutes depending on how runny you like them. ⁣

Serve with chopped parsley and some fresh crusty bread 🥖 ⁣
