A really yummy dessert option that you could easily switch the fillings to whatever takes your fancy that day.
Makes 10:
✔️ 2 tbsp unsalted butter
✔️ 2 tbsp sugar
✔️ 3 apples, peeled and diced
✔️ 1 tsp ground cinnamon
✔️ 1 tsp corn flour
✔️ 375g ready rolled shortcrust pastry
✔️ 1 egg, beaten
For the topping:
✔️ 1 tbsp ground cinnamon
✔️ 1 tbsp icing sugar
To serve:
✔️ whipped or ice cream
Preheat oven to 200c/180c fan.
Melt the butter in a pan over a medium to high heat and add the sugar and stir until it dissolves. Add the apples, the cinnamon and 1 tablespoon of water. Cover and cook until the apple is soft but not mushy.
Mix the cornflour with 2 tablespoons of water then pour into the mixture. Cook for 1 to 2 minutes to thicken, then take off the heat.
Divide the pastry into 10 equal sized pieces and roll out in to long thin rectangles. Place a spoonful of the apples in the top left corner of one of the rectangles. Fold over into a triangle and continue folding until you have a neat triangle parcel. Seal with your fingers and then brush with egg and bake for 10 to 15 minutes until golden brown.
Sprinkle over a dusting of icing sugar and cinnamon and serve warm.
