These spring rolls are a refreshing change from the usual fried variety and the fillings can be interchanged with whatever you have available. The sauce is the real winner here and you will want to make it again and again.
For the sauce (mix all together):
✔️ 1 small red chilli, finely chopped
✔️ Juice of 1 lime
✔️ 3 tablespoons of fish sauce
✔️ 1 tablespoon caster sugar
✔️ Inch of ginger, grated
✔️ 2 cloves of garlic, grated
Then using large 22cm rice paper sheets, lay in warm water for 5 seconds, remove and then roll up with all your veggies and meat if using (chicken or smoked duck both work well) then leave for an hour to chill in the fridge.
Once chilled, dunk in the sauce until your hearts content.
