Mussels in White Wine and Garlic

Another day in the Campbell household 👩🏻‍🍳 ⁣

A quick recipe for the yummiest mussels (serves 2 as a main):⁣

✔️ Knob of butter⁣
✔️ 3 x shallots, finely chopped ⁣
✔️ 2 x garlic cloves, sliced ⁣
✔️ 300ml white wine ⁣
✔️ 900g Mussels (prepared) ⁣
✔️ 3 stalks of thyme ⁣
✔️ 150ml double cream⁣
✔️ 25g chopped parsley ⁣

Heat the butter on a high heat until melted then add shallots and garlic for one minute. ⁣

Then add the wine and once it is bubbling intensely add the mussels and thyme and cook on a high heat for 3-4 minutes until all the mussels are open. ⁣

Once they are cooked take them off the heat and finish with the double cream and parsley. ⁣

Serve with fresh crusty bread to mop up all those juices 👩🏻‍🍳
