Another day in the Campbell household 👩🏻🍳
A quick recipe for the yummiest mussels (serves 2 as a main):
✔️ Knob of butter
✔️ 3 x shallots, finely chopped
✔️ 2 x garlic cloves, sliced
✔️ 300ml white wine
✔️ 900g Mussels (prepared)
✔️ 3 stalks of thyme
✔️ 150ml double cream
✔️ 25g chopped parsley
Heat the butter on a high heat until melted then add shallots and garlic for one minute.
Then add the wine and once it is bubbling intensely add the mussels and thyme and cook on a high heat for 3-4 minutes until all the mussels are open.
Once they are cooked take them off the heat and finish with the double cream and parsley.
Serve with fresh crusty bread to mop up all those juices 👩🏻🍳
